Fresh Fig Cake


   Ingredients
1/4 cup butter, softened
1 cup white sugar
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup evaporated milk
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup chopped fresh figs
1/4 cup packed brown sugar
1/4 cup water
2 cups chopped fresh figs
1 tablespoon lemon juice

   Directions
1. Preheat oven to 350 degrees F (175 degrees C). Spray two 8-inch round cake pans with vegetable oil spray.
2. In a medium bowl, sift together flour, salt and baking powder. Set aside.
3. In a large mixing bowl, cream butter with the sugar until fluffy. Add egg and beat well. Add flour mixture alternately with the evaporated milk. Fold in vanilla and almond extracts and chopped figs.
4. Divide into two prepared 8 inch round cake pans. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center comes out dry.

To make the filling
In a saucepan, combine 2 cups figs, brown sugar, water and lemon juice. Bring to a boil. Reduce heat to a simmer and cook until thickened, about 20 minutes. Spread thinly between layers of cake and on top.




Figs oozing with Goats cheese

Fresh figs stuffed with succulent goat cheese wrapped with grape leaves roasted on the grill and drizzled with honey.


   Ingredients
  • 8 fresh figs
  • 4 ounces goat cheese
  • 8 grape leaves, drained and rinsed
  • 1 cup honey


   Directions
1. Lightly oil grill and preheat to medium heat.
2. Make a small incision in the bottom of each fig (large enough to hold pastry bag tip). Place goat cheese in pastry bag with plain tip. Fill figs with goat cheese by squeezing a small amount of cheese into the bottom of each fig. The figs will plump up when filled. Wrap each fig with a grape leaf and skewer 2 to 3 figs on each skewer.
3. Place fig skewers on hot grill. Cook for 2 to 3 minutes, turning once, and serve.





Fig-Orange Muffins


   Ingredients
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • � tsp. salt
  • zest of one orange
  • 1 cup plain yogurt
  • � cup butter, softened
  • 1 cup Figs (chopped)
  • 1 cup sugar
  • 2 eggs






   Directions
1. In large bowl stir together flour, baking soda and salt.
2. In large mixer bowl cream butter and sugar.
3. Add eggs and beat until fluffy.
4. Place figs and orange zest in food processor and mix until mixture forms a paste.
5. Blend fig paste into creamed butter mixture; stir in yogurt.
6. Add fig mixture all at once to dry ingredients and stir just until moistened.
7. Divide batter among 12 large greased muffin cups.
8. Bake in 400� F oven 15 to 17 minutes or until done.






Chocolate-Fig Pecan Bars


   Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup sugar, divided
  • 10 tsp. butter or margarine
  • 8-ounce Figs, chopped
  • 3/4 cup chopped pecans
  • 2/3 cup chocolate chips
  • 3 large eggs
  • 3/4 cup light corn syrup
  • 1 tsp. vanilla extract






   Directions
1. Heat oven to 350�F.
2. In medium bowl, stir together flour and 1/4 cup sugar.
3. Add butter, cut into small pieces.
4. With pastry blender or two knives, cut butter into dry ingredients until mixture resembles coarse crumbs. (Mixture will be dry.)
5. Press crust in bottom of lightly greased 13 x 9 inch baking pan.
6. Bake for 15 minutes or until edges begin to brown.
7. Sprinkle figs, pecans and chocolate morsels over crust.
8. Lightly beat eggs, gradually beat in remaining 1/2 cup sugar, corn syrup and vanilla until well blended.
9. Pour over crust.
10. Return to oven for 20 to 30 minutes or until filling is firm around edges and slightly soft at centre.
11. Cool on wire rack. Cut into bars.
12. Makes 32 bars.
