Cherry Cheesecake Tarts
18-20 vanilla wafers

500 grams cream cheese (16 oz)

3/4 cup sugar

2 eggs
1 tsp. vanilla

dash of cinnamon

1 can cherry pie filling
Use foil cupcake holders for baking.  Place a wafer in the bottom of each.  Mix cream
cheese, sugar, eggs, vanilla and cinnamon.  Fill each cup 2/3 full.  Bake at 375 degrees
for 10-15 minutes.  Let cool, top each tart with cherry filling.  Keep in refridgerator.

These are great for Christmas or any time you want to impress your guests.
Mud Pies
Bring to a boil, 6 tbsp cocoa, 1/2 cup butter,  1/2 cup milk,  2 cups sugar.

Remove and add,  1 cup coconut,  3 cups oatmeal  and 1/2 tsp vanilla.

Mix ingredients until well blended,  drop by teaspoon onto wax paper and let set. 

Keep cool.   

I add more cocoa than the recipe calls for because I prefer them to be more chocolatey.

Experiment until you get it the way you prefer.
