| Mediterranean Chicken and Farille 4 boneless skinless chicken breasts 1/4 cup melted butter or I can't believe it's not butter spray lemon pepper to taste (about 1 teaspoon) 4 ounces farille pasta (bowties) cooked and drained. 1 Tbsp olive oil or spray butter 3 garlic cloves 1 small red onion sliced lengthwise 1/2 green pepper cut into strips 8-10 mushrooms quartered 1 6 ounce can medium black olives, drained 2 cans Italian petitie diced tomatoes or 2 cans petite diced tomatoes and 2 tsp Italian seasoning 1/2 bag fresh baby spinach 1 Tbsp balsamic vinegar 1 Tbsp lemon juice Salt and pepper to taste Feta cheese Mix butter and seasonings. Grill chicken, brushing with butter or place chicken in casserole dish sprayed with cooking spray. Pour butter over chicken and bake about 40 minutes or until done. Keep warm. Cook pasta according to directions. Drain. In a large skillet, saute garlic. Add onions saute for 3 minutes. Add mushrooms and peppers. Saute for 2-3 more minutes. Stir in tomatoes, adding olives and spinach, vinegar, juice and seasonings. Cover and simmer for 10-15 minutes. Add pasta and stir well. Simmer 10 more minutes. Serve chicken on pasta.
