Bean Sprout Soup

K'ongnamulkuk

1. Thinly slice the beef and cook in the soy sauce and sesame oil till it changes color.

2. Add 1 cup water and the bean sprouts, and simmer until tender.

3. Add 6 cups water and the sesame salt; boil for 10 minutes.

4. Cut the onions or chives into 1" lengths and mix them with the eggs. Drizzle this mixture into the soup.

5. Check the seasoning, adding pepper to taste, and serve immediately.

Bean sprout soup is often made without meat or eggs; in this case add 3 cloves of finely chopped garlic to the soy sauce and sesame oil at the beginning, and sprinkle in ½ t MSG (if liked) just before adding the green onions.

Bean sprout soup is very good stuff! It was a new experience, and I really enjoyed it. I give this one a definate thumbs up!
