Ingredients
4 bricks fresh tofu
3 tblsp canola oil
3 tblspn flour
2 stalks green onions
1 tblsp chopped ginger
1 tblsp Chinese cooking wine
1 teasp sesame oil
1 XL egg
1/2 teasp salt
1/3 cup Campbell's chicken broth
Instructions
Allow tofu to soak overnight in fresh water
Prepare green onions and ginger finely; set aside
Cut tofu bricks vertically into thirds
Crack egg into a bowl and beat until smooth
Spread flour over a clean plate
Pour canola oil into dry non-stick pan; pre-heat at LOW
Flip 12 tofu slices into flour, then
Dip each floured slice into bowl of egg yolk
Place egg-ed slices in pan, starting from rim inwards
Pour remaining yolk evenly over tofu in pan
Turn heat up to MED
When yolk boils in pan, flip slices with wooden spatula
Aerate slices by poking each 4x with fork
Hand-sprinkle green onions and ginger over slices
Next sprinkle salt evenly over slices
Pour cooking wine evenly over slices
Pour chicken broth evenly over slices
Reduce heat to LOW; simmer for 1 min
Transfer slices to serving plate, stacked
Add sesame oil to juice in pan; pour over tofu
Serves 3-4; enjoy
