Stuffed Peppers 1 lb. ground turkey breast or ground chicken breast 1 onion 8 green peppers 2 Tbsp. tomato paste (salt free) 1/2 tsp. paprika 1/2 tsp. rosemary 4 cups cooked rice 2 cups sliced mushrooms 2-3 cloves of garlic 1/2 tsp. oregeno 1/2 tsp. basil In a bowl, combine cooked rice with herbs to suit your taste. You can add additional seasonings (i.e. chili powder) as well. In a large non-stick pan, saute onion and mushrooms. Add garlic and ground meat and cook until done. Combine this mixture with cooked rice in bowl and mix well. Dilute tomato paste with water and mix into rice and meat mixture. If you like things seasoned well, add more herbs. Slice off top of peppers, core and remove seeds (save tops). Steam peppers for 7-8 minutes. Spoon rice/meat mixture inside green peppers and cover with tops. Spray a baking dish with non-stick spray. Cover baking dish with foil. Bake at 350 degrees for about an hour. Each pepper will contain approximately 1/2 cup of rice and about 2 ounces of meat.
