Seafood Gumbo 1 med onion chopped 1 C. broth (I used Vegetable broth) 1 stalk celery chopped 1 bay leaf 4 cod fillets cut into bite sized pieces this is done easily when fish is still semi frozen (or whatever kind of fish you like) 1 lb. shrimp (peeled and deveined) 1/2 C. oat flour 2 C. water freshly ground pepper In a large pan, saute the onion, celery & bay leaf using the broth. In a non stick frying pan, slowly brown the flour, be careful not to burn it, but the flour gives the flavor. It may take ten minutes to get it brown. Don't rush it. When the flour is brown, add 2 cups of cold water...this will be thick... add it to the onion... in the frying pan, sear the fish and shrimp (if the shrimp is uncooked), add it and the shrimp to the flour/onion mixture, you may need to add more water...
