No Wheat Tabbouleh Salad- from Jennifer (daughter of 2 body makeover customers) Salad Ingredients: 1 cup dry rice prepared according to package directions (this replaces the bulgar wheat that is usually called for- I use brown basmati rice because it has a nice aromatic flavor) 1 tomato- seeded and finely chopped 1 cucumber- peeled, seeded and finely chopped 1 bunch of parsley- well rinsed and finely chopped 1 bunch of cilantro or mint (leaves only)- well rinsed and finely chopped (traditional tabbouleh is made with mint, but I don't like it as well as with cilantro; try it both ways and take your pick) 1/4 cup pine nuts- coursely chopped (optional) 1 cup white or red onion-finely chopped Washed leaves of your favorite lettuce to serve. Sauce ingredients: 1/4 cup lemon juice 2 T olive oil garlic powder to taste table pepper to taste crushed red pepper to taste (the kind you put on pizza) Directions: Combine salad ingredients in a bowl and set aside. Combine sauce ingredients in a coverable container and shake to mix well. Pour sauce over salad and chill covered for at least one hour. Serve cold over a leaf or two of your favorite lettuce. This is great as a side dish or as a meal.
