Rice noodles ~ from Yahoo group member teepowers Ok, I think there is a recipe place somewhere here but I am going to be politically uncorrect and post it here. I'm lazy...what can I say? Sautee in low sodium chicken or beef broth: 1/4 cup Diced celery 1/4 cup Diced Mushrooms 1/4 cup Diced Onions Garlic Pepper Herbs Whatever your favorites are, it doesn't matter Set aside... Boil the rice noodles for 3 minutes. I just tear off about a 3rd of the package. Strain and rinse the noodles. Toss them with the veggies. Measure into 1/2 cups portions and freeze in ziplocs. To eat: Thaw in microwave for 1 to 1.5 minutes.. Now I don't measure anything when I cook. I just cook to taste but I put down measurements to give you an idea of the quantity I make. You can vary this any way you like but I would not over cook the noodles.
