Peppers mushrooms onion zucchinni stir fry. From yahoo group member ~ Certifiable1 2/3 cup onions sliced or chopped. 1/2 to 1 cup mushrooms sliced 1 zucchini sliced about 1/4 inch thick 1 large green pepper sliced into strips 1 large yellow pepper sliced into strips garlic to taste (I use 2 or 3 cloves crushed) oregano to taste (I sprinkle top of mixture probably 1 table spoon) basil to taste (I sprinkle top of mixture probably 1 teaspoon) 1/4 to 1/3 cup Cooking white wine or low sodium chicken/veggie broth (be careful when using cooking white wine as some are high in sugar and sodium) In a wok: add onions, mushrooms, peppers, garlic and half the wine Bring to a simmer over medium high heat while stirring. Add the peppers, zucchini, and the rest of the wine Sprinkle with oregano and basil (and any other spice you may like) Stir mixture well. Turn heat down to medium or medium low and cover. cook for about 15 minutes stirring occasionaly or until vegetables are cooked to your liking. Makes about 6 servings.
