Microwave Fritatta from Provida Chat Forum member hunneebee I made this for dinner tonight and thought it was very yummy. I didn't see a specific area for egg dishes, and I suppose you could eat this for breakfast if you like onions and garlic in the morning. Microwave a small baking potato for 3 minutes, then peel and cut into thin slices. Place in a single layer in the bottom of a shallow microwaveable dish. Layer one seeded and sliced roma tomato and a small thinly sliced zuchinni. Sprinkle a minced garlic clove, a sliced green onion, and a couple dashes each of basil, marjoram, and pepper over the vegetables. Stir together in a separate bowl 2 or 3 egg whites, one teaspoon water, and a dash of Mrs. Dash seasoning. Beat until fluffy and pour evenly over the vegetables. Microwave for 5 to 6 minutes or until set. It would have been even better if I had some red peppers and mushrooms to add with the vegetables!
