HOT AND SOUR RICE This is a very good recipe if you are craving Chinese food! 4 cups cooked rice (brown or white) 2 Tbsp l/s tomato paste 1/4 cup rice vinegar 1/4 cup water 2 packets Splenda 3 cloves garlic-minced 1/2 tsp crushed red pepper flakes 1/4 cup scallions-finely sliced 4 cups lettuce-shredded 2 cups bean sprouts In a sauce pan slowly bring to a boil the tomato paste, rice vinegar, water, Splenda, garlic, and red pepper flakes. Lower heat and simmer for 5 minutes. Remove from heat. In serving bowls divide evenly in layers beginning with the lettuce, bean sprouts, and the rice.
