From Kathleen: I have a friend who is on the ProVida diet and I gave her this golden oat recipe that I had from a Quaker Oats book dated from 1979. I updated it and modified it for low fat and salt free. This is a very tasty side dish, I've been making it for years. Yummy as a cereal, wonderful with chicken. Golden Oats 1 1/2 c oatmeal, dry 2 egg whites or egg beaters 3/4 c broth, water, orange juice or apple juice butter spray Mix the dry oats and egg whites in a bowl. The mixture should be lumpy. Spray a frying pan with the butter spray (or whatever), warm up the pan to medium and add the oat mixture. Stir constantly for 3-5 minutes until the oats are dry and browned a bit. Add the water, broth or orange juice. Cook, stirring occasionally 2-3 minutes until the liquid evaporates. Serve in place of rice.
