From PonoHawaii - Shawnja Fried Rice 4 cups cooked sticky rice (not hot) 4 egg whites 2 cups frozen peas and carrots 1/4 cup chopped green onions 1/8 cup low sodium soy sauce 1/2 tsp. cayenne pepper 4 oz chopped cooked fish, shrimp or chicken (optional) Place rice in a mixing bowl with other ingredients. Mix using your hands, making sure the egg whites are evenly spread throughout the rice. Spray a non-stick frying pan with no sodium, no cholesterol, no fat Pam cooking spray. Get pan hot on medium heat and then dump in rice mixture. Spread around the pan and let sit until browned very slightly. Turn over or stir 2-3 times over 20 minutes. Creates an entire meal in one yummy dish. Package them in 1/2 cup ziplock packets with your protein for easy microwave heating. Makes approximately 12 1/2 cup packets that will stay fresh 2-3 days with meat - without meat for up to a week.
