Energy Muffins 2 c oatmeal (uncooked) 10 egg whites 2 apples peeled and chopped or 2 bananas mashed 1 t cinnamon 1/2 t vanilla 2 T Splenda Mix all ingredients until well blended,about 2 minutes put in Pam sprayed muffin pan. Bake at 375 for 15-20 minutes, makes about 12 muffins.Store in the refrig. Barbara in NC ****Updated*** I used 1/2 a shredded carrot to the mix. Like in carrot cake you can't taste them.
