Egg Whites from Provida Chat Forum member ac2lize OK, I have the solution to those nasty, tastless egg whites ya'll have been trying to choke down! I used to be a vegetarian and I made "scrambled tofu" with this spice mixture. It really helps as it adds a little color too! 1/4 tsp turmeric 1/4 tsp curry powder 1/4 tsp cumin 1 tsp onion powder 1 Tbsp Vegetrates brewer's yeast flakes (optional but yummy!) 1/2 c pureed fresh tomato or no salt added tomato sauce 1/4 C minced scallions fresh ground pepper to taste Mix this all together in a little bowl. Separate your egg whites into a tall container so you can whip them with 1Tbsp broth per egg white. Then whip in the seasoning above adjusted for the number of eggs you are making. This will flavor a dozen whites. I usually cook a dozen at once cause I'm very lazy! Oh, adding a little broth to your non-stick pan while you are heating it helps the eggs to stick a little less. Even so, I usually finish cooking my dozen whites under the broiler! FORGOT TO MENTION: Whip the egg whites with broth and seasoning until they are a little frothy on top. This makes for truly fluffy scrambled eggs! Also, I pour the tomato sauce over the top rather than cooking with the eggs. ENJOY! Sandra
