Eggplant Gumbo Type "B" Spicy and very tasty. from Provida Chat Forum member DeAnna Medium Eggplant Dark and Firm Peeled and cubed 3 Sliced mushrooms Chopped onion to taste 1 medium chopped tomato 1/2 cup cooked rice 1/4 cup Chopped Green Pepper Sodium free tomato paste (just a spoon or so) Garlic powder to taste Black Pepper 1/2 cup water. More if you like it thinner. Throw it all in the pot, let it simmer until veggies are soft. Add a tbsp of salsa for extra zip. Makes about 3 1/2 cups. Enjoy! DeAnna
