"City Chicken" ( uses no chicken just beef and pork) 1 pound boneless pork cut into cubes 1 pound eye round steak cut into cubes Salt Sense, black pepper, garlic to taste 1/2 c oat flour ( put some oatmeal in the blender and blend) Pam Spray Alternately thread pork and beef on small wooden skewers. Combine seasonings, and oat flour. Coat and dust meat with mixture. Then in a nonstick or regular skillet spray a little Pam. Put "chickens" in skillet and brown, turning frequently. Take meat out of the pan and put in a glass baking dish cover with foil. Bake 1 1/2 to 2 hours at 300 degrees. Thicken pan juices and serve over mashed potatoes. Barbara in NC
