Chicken Fajitas! Tortilla 2 tbspn. oatmeal blended into a flour; 2 tbspn. egg white product; 1 tbspn. water; spices to taste, I used a little pepper and garlic powder. Spread the mixture over the bottom of a smallish pan, it should be very thin. Cook throughly over medium, turning once. Fillings Saute red and green peppers, onion, or other vegetables in a pan using only pam. Cook until tender. Add chopped up tomatos, about 1 1/2 oz. of cut up chicken, 1/4 c. of pre-cooked rice and about a tbspn. of sodium free tomato sause. Cook throughly. Spice to taste, I again used garlic and pepper. Wrap in tortilla and enjoy! This recipe includes about 2 oz. of protein, 1/2 c. carb., and a cup of vegetables. Feel free to adjust! Ashley-Yahoo Group member
