Chicken recipe from Provida Chat Forum member s23harmon Here is a great recipe that I just played with this morning. I don't have a name for it or anything. But it was REALLY good. 2 chicken breast 1 1/2 cups of chicken stock 1 shallot 2 tsp of garlic (I really love garlic, you could cut this in 1/2 if you like) 1/4 mushrooms diced red wine Use a medium size saute pan. Place chicken broth in pan on high. Add garlic, mushrooms and shallots. Let it come to a boil. Make sure your have enough chicken stock to come up your saute pan at least a 1/3 of the way. Place chicken breast in pan. Let it cook on med high to high until 1/2 cooked. Use a knife to check wellness in the middle of the breast. Some of the chicken stock will start to evaporate, this is okay. After the chicken is 1/2 cooked, place enough wine to cover the bottom half of the chicken breast. Cook until it is about a 1/2 cup of wine/broth mixture left. Remove from heat. Cut the chicken length wise and place back in the wine/broth mixture and saute it until chicken is completely cooked. It's nice and juicy and the wine makes it taste wonderful. It is great with rice and/or your favorite veggies.
