bruschetta salad dressing from Provida Chat Forum member zelda I was getting sick of having rice and chicken or rice and steamed veggies. I wanted to make my own salad and since salad dressing is a no-no I decided to make a bruschetta salad dressing. I now can have chicken salad with Bruschetta! If anyone is interested here is how I made it. Bruschetta 4 small/medium tomatoes diced 1/8 of a medium onion diced 2 cloves of garlic finely chopped 3 tsp garlic wine vinegar 1 tsp - 1/2 tbsp dried basil (optional) I added one tsp of sugar (didn't have sweetner available) Combine tomatos, onion, and garlic. Add wine vinegar, basil and sugar and mix well. Refridgerate and let it stand for 1 day (of course, it could be less but I used it the next day). Use as topping for Salad! I hope everyone likes. I like garlic if you haven't noticed, so you could cut down on the garlic a bit since you're adding garlic wine vinegar. I tried it today, and I'm impressed with how well the bruschetta turned out (of course, it's not at all hard to make). I'm not a tomato fan at all.. yet bruschetta is something I can definitely stomache!
