Yam Mousse from Provida Body Makeover Specialist - AL 4 or 5 large sweet potatoes, cooked 1 ripe banana 3-4 egg whites 1/4 cup hot rice milk 1/4 tsp. ground ginger Peel skins off sweet potatoes and mash. Add banana and mash. Combine 2 egg whites, 1/4 cup hot rice milk and 1/4 tsp. ground ginger and mix until well blended. Add to mashed sweet potatoes & banana. Beat 1-2 egg white until stiff but not dry. Gently fold into mashed mixture. Lightly grease with non-stick cooking spray a soufflé or pie dish or six individual ramekin dishes. Spoon mixture carefully into dish or dishes. Make a design on top of mixture with fork as desired. Bake at 400 degrees for 30 minutes or until heated through. You may substitute Pumpkin (if you use canned pumpkin, please make sure there are not additives added) for the Yam to make Pumpkin Mousse (suggestion compliments of member SlaveToFoodNoMore). Makes 6 to 8 servings. Note: You can substitute solid packed pumpkin as long as it does not contain additives that are not recommended on this program it is fine. It would be considered a Carbohydrate A which a is what a yam is as well so you can indeed substitute it and make Pumpkin Mousse instead of or in addition to Yam Mousse!
