Summer Casserole
2 lbs. Summer squash or zucchini
1 Small Onion, chopped
1 Can Cream of Chicken Soup
1 Cup Sour cream
1 Cup Carrots, shredded
Salt & Pepper to taste
Mix above ingredients together and pour into shallow casserole or square cake pan.
Next, mix together 1 8-oz. pkg. Herb seasoned stuffing mix & 1/2 cup melted butter.
Top vegetable mixture with stuffing mixture, cover and bake at 350 degrees for 30 minutes.
Uncover and bake 30 minutes more.
