Donna's Orzo Soup
1 2-lb 3-oz. can tomatoes
1 lb. mild Italian sausage
2 cans chicken broth
1 cup onions, chopped
1/4 tsp. basil
1/4 tsp. salt
1/2 cup Orzo*
(*usually found with the pastas or in your market's gourmet foods section)
Break up sausage and saute in large soup pan until pink disappears.
Add onion and continue cooking until onion is soft.
Add tomatoes, broth and seasonings; bring to a boil.
Add orzo and lower heat to simmer. Cook about 20 minutes or until done.
