NO BOTTLES, NO MEAT, HOW NEAT!
Sauce for Pasta

1 lb. mushrooms, cut in halves
2 lg. tomatoes, chopped in 3/4" chunks
minced garlic to taste
3/4 cup green onions, sliced
1/2 cup fresh parsley (or basil), chopped
2/3 cup wine (your choice)

Heat 2 Tbsp. olive oil and saute mushrooms and garlic for 4 minutes.
Add wine and cook for another 2 minutes.
Add tomatoes, onions & herbs and heat through.
Remove from heat, add salt & pepper to taste.
Serve with Penne, Rigatoni, Ziti or other big pasta and toss with grated parmesan or mozzarella cheese
Yield: Serves 2 - 3
