Recent pictures from Barbara at the CIA
Barbara just finished up her first year at the Culinary Institute of America. She had a great time and learned a lot, but she's happy to be home to her own bed and bath!
The last class that Barbara took was Garde Manger. It includes reception foods, a la carte appetizers, and grand-buffet arrangements.
On the last days of class there is a Grand Buffet. Barbara's class made plated appitizers.
Barbara made Grilled Eggplant stuffed with goat cheese, decorated with endive and mediterranean veggies.
Other classes also contribute to the Grand Buffet. These are all breads.

Pate & Poached Pear I forget what this is called, but it's a stuffing inside the skin along side the meat.
I wonder if it tastes as good as it looks?
