10 Grain Bread
In large bowl, put 1 cup of 10-grain cereal, and pour 1-1/4 c. hot water over the top. Let sit while you Put 1-1/2 TBS yeast in 1/2 cup warm water and let bubble up, about 5 minutes.
To the 10-grain cereal, add
3/4 c. milk (I use soy or rice)
1/2 c. molasses (I put a tad into the yeast)
3 cups whole wheat flour (I grind my own)
3 TBS oil
1 tsp salt
handful of each: sunflower, sesame and poppy seeds
Add yeast and beat with wooden spoon for about 1 minute. Add two cups of white flour and blend well. Add an additional cup of flour a bit at a time, kneading it in well. It will probably use the entire cup. Knead for 20 minutes. Dough should be firm, maybe a little sticky. If it's too sticky, add a bit more white flour. Place in bowl, oil dough top and bottom, cover and let rise til double in bulk. Punch down, divide into two. Roll each piece out into a rectangle, then roll jelly-roll style, pinching seams and ends. Place in lightly greased pans*, let rise til double. Bake in 375 degee oven for 35 minutes. This recipe can also be used to make rolls (will make 2 dozen).
*If you're concerned about too much fat, you can make a substitute by using equal parts of liquid lecithin and vodka (yes, vodka!!!) Use very sparingly, as a little goes a looooooong way!
