FRESH SPINACH SALAD WITH ORANGE DRESSING



Dressing

1 cup cider vinegar
3 heaping tablespoons orange marmalade
1/2 cup sugar
2 teaspoons dry mustard
2 teaspoons salt
1 teaspoon freshly ground pepper
1/2 teaspoon Tabasco sauce
2/3 cup vegetable oil

Combine the vinegar, marmalade, sugar, mustard, salt, pepper and Tabasco sauce in a blender container. Add the oil in a fine stream, processing constantly at high speed until thickened.

Chill, covered, in the refrigerator until serving time.

Salad

4 bunches fresh spinach, trimmed
6 Red Delicious apples, chopped
2 cups chopped walnuts
1 3/4 cups golden raisins
6 green onions, chopped
1 pound bacon, crisp-friend, crumbled

Mix all salad ingredients together and toss with dressing. Dressing makes a lot, so you may not need it all. It keeps for a week or two in the frige.

Serve immediately.
