Spinach & Black Bean Burritos.


12 (8inch flour tortillas )
1 (1-pound can black beans, rinsed,drained)
1 (10 oz. pkg frozed chopped spinach, thawed and drained well.)
1 (16 oz jar picante sauce hot or mild----I use salsa)
1 cup salt free or reg. canned corn drained
1 teaspoon ground cumin.
1 1/2 cup shredded reduced-fat cheddar cheese (6oz)

preheat oven to 350......stack tortillas and wrap tightly in alum foil heat for 10 min.
while tortillas are heating....combine beans, spinach ,picante sauce in a large nonstick skillet over medium heat.mix well mashing about half of the beans w/ a fork. Add corn & cumin. Cook over med. heat stirring frequently about 5 minutes or until mixture is hot and bubbly.
prepare burritos...divide cheese evenly onto the centers. top w/ 1/3 cup of bean mixture fold in tops and bottoms then fold sides so enclosed. serve topped w/ salsa if desired. ( I use all the usual topping sour cream lettuce,tomato onion etc...what ever you like!)
