Oatmeal Cake


This recipe was shared with me from a friend and neighbor that I met overseas in 1985, while stationed in Turkey! Thanks Sabrina...it's since been a hit with family and friends everywhere we've been.

Cake Ingredients:

� Cup Butter or Margarine
1-� Cup Boiling Water
2/3 Cup Quick Cooking Oats
1 Cup Sugar
1 Cup Brown Sugar
2 Eggs
� tsp. Cinnamon
1 tsp. Baking Soda
1-� Cup Flour

Topping Ingredients:

� Cup Butter or Margarine
1 Cup Chopped Nuts
� Cup Canned Milk (evaporated)
� Cup Sugar
� tsp. Vanilla
1 Cup Coconut

Cake Directions: Combine butter, water, and quick oats. Let stand in bowl 20 minutes, (do not stir, at this time). Then add sugars, eggs, cinnamon, soda, and flour. Mix well and place in a greased and floured 9 X 13" pan in a 325o oven for 30 minutes, or until clean cake test is done.

Topping Directions: Bring all topping ingredients to a boil, remove from heat and place on hot cake. Return to oven, under the broiler unit to brown coconut topping.

** NOTE: Watch cake in the broiler very closely, do not leave in for more than 1-2 minutes. Do not leave unattended�. Topping will burn (very quickly)! **

Begin to prepare topping about 10 minutes before cake is done, so that it is ready as soon as cake comes from oven.

This is a very moist cake and it's delicious.
