MINI CHEESECAKES
Servings: 6-7 dozen
Crust: 1 1/2 c. crushed graham crackers
1 T. sugar
1/4 c. melted butterFilling:
15 oz. condensed milk
8 oz. cream cheese
1/3 lemon, juiced
1 tsp. vanilla
small can cherry pie fillingPreheat oven to 350F. Mix together graham cracker crumbs, sugar and butter. Blend milk, cream cheese, lemon juice and vanilla together until smooth. In miniature-size paper cups, place a little of the graham cracker mixture, then 1 tsp. of cream cheese mixture (almost to top of cup). Bake at 350F for 10 minutes. Freeze or refrigerate to set, then top with one cherry and a little cherry filling each. From Annie in Massachusetts
