HOMEMADE BREAD (using mixer)
2 pkg yeast
2 beaten eggs
1/2 cup lukewarm water + 2 cups lukewarm water
1/2 cup melted butter (cool to lukewarm)
2 tsp sugar + 1/2 cup sugar
1 1/2 tsp salt
8 cups flour (3 cups whole wheat and 5 cups white)1. Dissolve yeast in 1/2 cup water and 2 tesspoons sugar, let stand for at least 15 minutes, stirring occasionally. (The yeast mixture will foam - just 1 cup, stirring every 3 or 4 minutes - that's what it is supposed to do.)
2.* Mix eggs, 1/2 cup sugar, butter, salt and 2 cups lukewarm water.<> 3.* Add yeast mixture, then stir in 6 cups of flour, 1 cup at a time, beating at least 1 minute each time and scraping sides of bowl often.
4.** Stir in remaining 2 cups of flour, 1/2 cup at a time until well absorbed.
5. Let rise until double in volume, about 1 to 1 1/2 hours.
6. Punch down, make into golf ball sized rolls or divide into thirds and put into loaf pans.
7. Let rise again until double, about 45 minutes to an hour.
8. Bake until bread sounds hollow and is golden brown in 400 degree oven.
9. Baste with butter on the top as soon as you get the bread out of the oven.
