Greek Salad


4 Roma tomatoes
1 small white onion (vidalia or walla walla sweet)
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 cucumbers
1/4 pound feta cheese with basil
1/4 cup your favorite fat free italian salad dressing

Wash all vegetables, trim onion and tomatoes. Quarter Roma tomatoes, slice onion in half cross ways, slice very thin. Slice all bell peppers lengthwise approximately 1/4" thick slices. Peel cucumbers, cut in half lengthwise, and quarter. Crumble feta cheese over vegetables, stir in salad dressing, refrigerate until ready to serve.

Note.. add sourdough or soft pretzels to meal.
