3 cups chopped apples
2 cups sugar
Pour sugar over apples, stir and let set 30 minutes to make juice
2 eggs
1 cup oil
3 cups flour
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 teaspoons soda
2 teaspoons vanilla
1 cup chopped walnuts
Add eggs to apples, add dry ingredients, oil, and vanilla. Stir by hand just until well blended. Stir in walnuts.
Pour into well greased and floured bundt pan. Bake 1 hour and 15 minutes in a 350 degree, preheated oven.
Glaze
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 cup water
1/2 teaspoon vanilla
Combine sugar and cinnamon, add water and bring to a boil. Boil one minute. Cool and add vanilla. Use pastry brush to apply to warm cake.
