CHICKEN PASTA
Here's one of my favs....
Take a package of bowtie pasta, and cook it. Set aside.
cut 4 skinless chicken breasts into bite sized pieces. Brown in a pan sprayed with Pam. When the chicken is brown, add 2 teaspoons of chopped garlic. Brown a minute more.
Then add a cup of chopped tomatoes, 1/4 cup of chopped basil (or tbsp dried) 1/4 cup pine nuts, and a package of chopped spinach, thawed and squeezed dry.
Add 1/4 cup lemon juice, and 1/2 cup white wine. Cook for a couple of minutes, stirring frequently. add 1/2 cup of grated parmesean cheese, and salt and pepper to taste. (course ground or cracked pepper is best) add to noodles, mix well, and serve. enjoy!
