Veal Caprese recipe as requested:
Ingredients:
1/2 cup flour
Salt and pepper to taste
2 pounds veal scallopini
1/2 cup olive oil
1/4 cup carrots, diced
1/4 cup celery diced
3 tablespoons Calamata or Greek olives
2 tablespoons of capers
2 cups tomato sauce
Preparation:
1. Lightly coat veal with flour
2. Heat medium sized pan over medium heat
3. Add olive oil to coat bottom
4. Add carrots and celery, then stir to blend flavors
5 Add olives, capers and stir again
6. Place battered veal on top of vegetable mixture and lightly brown on both
sides.
7. Add tomato sauce and cook until simmering and tender.
I also preferred at step 3 to add chopped garlic and a medium onion chopped
for additional flavor.
The guests raved. I served with a side dish of capellini.
