Company Brunch

5 sourdough English muffins, split
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
1 cup chopped ham
8 eggs, lightly beaten
1 cup (1 carton) egg substitute
2 cups milk
1/3 cup chopped green onions with tops
1 cup sliced fresh mushrooms

Spray 9 X 13 pan with non-stick spray. Arrange the English muffins in a pan. Sprinkle wit both cheeses and ham. Beat the eggs, milk, and green onions in a bowl until mixed. Pour over the prepared layers. Chill, covered with foil, for 8 to 10 hours. Remove from the refrigerator and sprinkle with the mushrooms. Bake at 350 degrees for 50 minutes or until set. Let stand for 10 minutes before serving.
