Boiled Eggs

The yolk tends to settle to the bottom if the eggs remain in one position while being hard cooked so to make "deviled" eggs it is best to gently stir the eggs for the first six or seven minutes of cooking. This will help center the yolks.

Place eggs in pan of cold water and slowly bring to a boil. Boil 3-4 minutes.
Remove from the heat.

Cover and let stand for an additional 13 to 15 minutes. Drain the water and shake the pot to crack the eggs.

Cool the eggs rapidly with cold water. Allow time for the eggs to cool. They should then peel very easily. Eggs purchased a week or two earlier will peel easier than fresh eggs,
