Bean Soup



1 pound pinto beans
1 pound large lima beans
1 pound blackeyed peas
1 pound Great Northern Beans
1 pound black beans
1 pound split peas
1 pound lentels
1 pound Red Kidney Beans
1 pound small red beans
1 pound brown rice

Mix all beans and rice together and store in sealed bags.

When ready to prepare soup

1 pound bean mix
1 cup chopped celery
1 bay leaf
1 can Rotel tomatoes
1 onion (diced)
1 clove garlic
1 pound browned ground beef
2 tablespoon chopped parsley
red pepper and salt to taste

Wash bean mix and drain. Cover with water and 1 tablespoon salt, and soak overnight. Drain. Add 2 quarts water adn all ingredients except tomatoes and parsley. Cover and simmer 2 hours. Add tomatoes and simmer 1 1/2 hours longer. Ten minutes before serving time, add parsley.

This soup is great with hot bread and salad.
