Oriental Salad
Description
A crisp, crunchy oriental-style salad.
Ingredients
- 1 package Ramen noodles, broken into smaller pieces (discard
seasoning packet)
- 1/4 c. butter or vegetable spread
- 1 c. pecans, chopped
- 1 medium head of Chinese Napa cabbage, chopped
- 4 scallions, chopped
- 1 c. snow peas, chopped
- 2 c. fresh bean sprouts, washed
- 1 c. fresh pineapple or mandarin oranges
- Dressing:
- 1/2 c. oil
- 1/4 c. red wine vinegar
- 1/4 c. sugar
- 1 or 2 tbsp. soy sauce (to taste)
- salt and pepper (to taste)
Preparation
- Heat a large frying pan to saute the ingredients in.
Directions
- Combine the dressing ingredients in a small bowl and set
aside.
- Saute the noodles, butter, and pecans until lightly browned,
then drain on a paper towel and set aside.
- Combine the noodle and pecan mixture with the remaining
ingredients in a salad bowl.
- Toss with the dressing just before serving.
- Serve chilled.
