Jim's Spicy Couscous
Description
Here's a great way to spice up your couscous the Moroccan way! (I don't know who "Jim" is, but it's not me.) Serves about six.
Ingredients
- 1 tsp. olive oil
- 2 green onions, chopped
- 1 sweet red pepper, chopped
- 2 tomatoes, chopped
- 1 zucchini, chopped
- 1 clove garlic, minced
- 1 cup chick peas (aka Garbanzo beans)
- 1/4 tsp. salt
- 1/2 tsp. curry powder
- 1 tsp. cumin
- 2 tbsp. parsley, fresh
- 1/8 tsp. cinnamon
- 1/2 tsp. ginger, freshly ground
- 1/4 tsp. cayenne pepper
- 1 cup couscous
- 1 cup boiling water
Preparation
- Get a medium-size skillet or wok.
- Get a medium-size saucepan.
Directions
- Saute the green onions, red pepper, tomatoes, zucchini, garlic, and chick peas in the oil for about five minutes.
- Remove from heat, but keep warm.
- Mix the salt, curry powder, cumin, parsley, cinnamon, ginger, cayenne pepper, and couscous in the saucepan.
- Add the cup of boiling water.
- Mix and let stand about five minutes.
- Add the first mixture and fluff with a fork.
