Gerri's Crab Cakes
Description
Simple and delicious crab cake recipe.
Ingredients
- 1 lb. lump crab meat (Phillips is a good brand)
- 1/4 cup mayonnaise
- 3 scallions
- 1/4 cup fresh parsley (or 1 tbsp. dry parsley)
- 1 pinch cayenne pepper
- 1/4 tsp. salt
- 1/4 tsp. ground pepper
- 1/2 cup bread crumbs
- Sauce:
- 1/2 c. sour cream
- 1/4 c. mayonnaise
- 2 tbsp. horseradish
Preparation
- Get a large mixing bowl.
- Get a medium-size skillet and fill with cooking oil (olive or peanut) about 1/4 inch deep.
Directions
- Mix crab, mayonnaise, and about 1/4 cup of bread crumbs.
- Add remaining ingredients.
- Mold mixture into patties, about three inches diameter.
- Roll patties in remaining bread crumbs.
- Cook in oil about four or five minutes per side, or until lightly browned.
- Mix ingredients for sauce and serve on the side.

friends at the beach and they were an instant hit. She tried to
