Andy's Salsa
Description
This is the greatest home-made salsa I've ever had, and it's not just
because my son makes it! Use for dipping with tortilla chips or anything
else you can do with salsa.
Ingredients
- 28 oz. can of whole peeled tomatoes
- 7 oz. can of chopped green chiles
- 1 "bunch" (about a handful) fresh cilantro
- 1 tbsp. white distilled vinegar
- 1 large carrot, diced
- 3 spring onions, chop off and discard the first inch or two, keeping
only the green parts
- 4 cloves garlic, minced (to taste)
- 1 tbsp. salt (to taste)
Preparation
- Set up a large blender or food processor.
Directions
- Combine the tomatoes, chiles, and cilantro in the blender. Include the
juice in the cans of the tomatoes and chiles.
- Add the remaining ingredients, noting that the garlic and salt
in particular should be adjusted to taste (at our house, we like a lot of
both!).
- Serve chilled.
