Duel With Count Dooku II
I think this fight was a big improvement over the first encounter in AOTC at least from an editorial standpoint if nothing else. There were only two small segments cut from the duel, both from the 2 on 1 portion of the fight. There were also a couple excised lines of dialogue from Count Dooku and Palpatine.

Let's start with Dooku's dialogue. The first line is from the start of the fight, the second is a bit later into the fight...

COUNT DOOKU
Just because they're are two of you, do not assume you have the advantage.

***

COUNT DOOKU
Your moves are clumsy, Kenobi...too predictable. You'll have to do better.

The published Illustrated Screenplay E-book does not contain either of these lines but they are quoted in the children's ROTS movie storybook and other published material. The first line is actually still intact in one of the movie clips from the ROTS videogame. Download the clip here (ZIP file).

Originally after Count Dooku had been defeated he was to ask Palpatine for help. According to the ROTS Making of book this was dropped at the request of Christopher Lee who thought it would be out of character for Dooku to beg for help. Another line spoken by Dooku after his defeat was "What?! You promised me amnesty..." This line was supplied by Spoileriffic (a reliable source during the spoiler run) in a detailed rough cut Dooku duel report for Millenniumfalcon.com.

Lastly, another line not included in the E-book script but referenced in the ROTS Movie Storybook was spoken by Palpatine encouraging Anakin during the fight...

PALPATINE
Use your aggressive feelings, Anakin. Call on your rage. Focus it, or you don't stand a chance against him.

Now onto the duel itself. As I mentioned earlier there were two small segments cut from the 2 on 1 fight. The first deleted segment would have taken place after this particular shot. The fight would continue toward the first set of stairs then back again to the spot where in the finished film Dooku Force pushes Obi-Wan in the face. To mask this deletion they cut to a reaction shot of Palpatine with a concerned look on his face then back to the shot of Dooku Force pushing Obi-Wan.

Update: Hyperspace has new Episode III Animatics video up which features a quick deleted shot from this segment of Dooku kicking Anakin across the table in the middle of the room.

The next segment would have taken place on the balcony atop the two staircases. As seen in the film upon converging at the top of the stairs Dooku parries both Jedi attacks while simaltaneously kicking Anakin back and suspending Obi-Wan in the air with a Force choke. The deleted footage consisted of some extra swordplay from Dooku fending off both Anakin and Obi-Wan before he did the Force choke/kick combo.

All of the deleted footage described above can be seen in the Making of Episode III #14 - "The Life of a HD Tape" webdoc. The screenshots are all taken from that webdoc. During the webdoc some of the footage is playing on monitors or computer screens in the background while people are talking which is why the screens aren't great quality.
