Portabella Angel Hair Pasta
3-4 Tbsp. virgin olive oil
1 large leek, sliced or 1/2 cup onion
3-4 garlic cloves, minced
16 oz. Package of sliced portabella mushrooms
1 Tbsp. Balsamic vinegar
1/2 cup parmesan cheese
10 oz. dried angel hari pasta
Pour the oil into a saute' pan and heat over medium heat for about 30 seconds. Saute' the leek for about 2 minutes until softened.  Add the garlic and saute' for another 30 seconds.  Add the mushrooms and saute', stirring frequently, unitl the mushrooms are wilted and the liquit they have given off has evaporated.  Add the balsamic vinegar, stirring well.
Bring a large pot of lightly salted water to a boil and add pasta, stirring to make sure the pasta is well separated.  Boil 2-3 minutes, until done.  Drain and transfer to alarge bowl.  Combine the pasta with the musrooms. Sprinkle with freschly grated cheese
