The Pine is a very robust mushroom with lots of texture, this is one of the qualities that makes it
a choice edible. The other quality would have to be it's unique aroma and taste, a spicy sweet smell all to it's own. Most people aquire a liking for the taste, but for some this is not the case.
To enjoy it's true flavour, I like to simply bake it on it's own in a little butter, soya sauce and sweet basil. Because it's flavour can be strong for some, it goes well mixed in with other dishes,
and still retains some of it's original flavour.
             The Japanese use the number # 1 and # 2 grade buttons for barbeque Teriaky brazing.
The open gilled # 3 and # 4 grade is used in sushi or stir fry. The # 5 grade is used in making
a clear broth soup. The # 6 grade is sometimes used in soup as well, but because of it's
low grade, the quality and freshness of the mushroom is not very good.
