Stir-Fry

  2 tablespoons vegetable oil

  1 bell pepper, cut lengthwise in half, thinly sliced

  1/2 lb oyster mushrooms, sliced

  2 leeks, trimmed, washed, cut diagonally into 1/2-inch pieces

  6 scallions, thinly sliced

  1 lb ham steak, cut into thin strips

  2 tablespoons soy sauce, 2 tablespoons white-wine vinegar

  2 tablespoons cornstarch dissolved in 2 tablespoons water

  4 slices of Mountain High Fibre or Rice Bread cut into lengthwise into thin strips

 

Heat a wok until hot. Add oil and swirl to coat wok. Add bell pepper, and plums and stir-fry 1 or 2 minutes. Add oyster mushrooms and leeks and stir-fry 1 or 2 minutes or until vegetables begin to soften. Push vegetables to one side and add scallions, ham and bread strips. Stir-fry 2 or 3 minutes, tossing ingredients to mix.

Stir in soy sauce and vinegar. Stir cornstarch mixture, and then stir into wok. Bring to a boil and stir-fry 1 or 2 minutes or until sauce thickens and coats ingredients
