Ham and cheese sandwich

½ cup natural low- fat yogurt, 1 tablespoon light mayonnaise

1 teaspoon apple cider vinegar, 1 cup shredded green cabbage or lettuce

1 carrots, coarsely grated (about ¾ cup)

4 slices corn Mountain Bread

125g low-fat, salt-reduced cooked leg ham and salami (optional), thinly sliced

125g reduced-fat Cheddar cheese slices

 

In a medium bowl, whisk together yoghurt, mayonnaise, vinegar and mustard. Add cabbage and carrot. Toss mixture to coat well.

Place 1 slice of bread and fold in to quarter. Fill bottom and top pockets with two tablespoons of cabbage or lettuce mixture. Place sliced ham, salami and cheese in the middle.

Repeat with the rest of the bread slices
