Apple-n-Ham Fingers

(Makes 16 fingers)

4 Slices Mountain Bread (choose from:

Wheat, Rye, Corn or Barley)

½ cup diced bacon or ham

1-teaspoon vegetable oil, 1 apple, grated

1 teaspoon lemon juice, ½ cup chopped

½ cup grated cheese, plus a little to sprinkle over the top

 

Preheat oven to 350f. Heat a non-stick pan and cook the ham or bacon in the oil for 1 minute, add the apple and celery and heat through. Remove from heat, add remaining filling ingredients and divide the mixture into four.

Lay out one piece of Mountain Bread and spread thinly with chutney. Spoon a quarter of the filling along the length of the Mountain Bread. Roll up firmly like a log and cut into four fingers. Repeat with each slice of Mountain Bead.

Place fingers, seam side down, on an oven tray lined with baking paper, sprinkle with extra cheese and bake for 10 minutes or until golden brown. Serve warm
