White Chocolate Cheesecake

Crust:
1 cup graham cracker crumbs
1/4 cup butter
3 tbsp sugar
Mix all ingredients, press into bottom of 9" springform pan.

Filling:
1 cup sugar
4 oz packages cream cheese
1 tsp vanilla
4 eggs
8 oz white chocolate, melted

Cream sugar, cream cheese and vanilla together. Add eggs one at a time. Stir in chocolate. Pour into pan in water bath at 450º for 20 minutes. Reduce heat to 250º and bake for 1 hour. Cool in oven with door open. Refrigerate for 12 hours or overnight before serving.

Serve with raspberries, strawberries or cherries.
